Celeriac (also known as celery root) is an ingredient that I would actually say I’m obsessed with…and it will be in season any minute. I primarily use it in butternut squash soup, but you can also use it in salads, slaw, stock and more. Look for bright green leaves and solid, crisp (i.e.: not soft or bruised) roots.
