On Wednesday, March 4th at 6:30pm, Clementine Restaurant, recently featured on Diners, Drive-Ins and Dives, is teaming up with the Oyster Recovery Partnership (ORP) for Oy Bay, a dinner whose proceeds will benefit the work ORP does rehabilitating and restoring the Chesapeake Bay oyster population. Sponsors for the evening also include Maryland’s own Flying Dog Brewery of Fredrick Maryland and Boordy Vineyards of Hydes Maryland; as well as Finlandia Vodka.

Joining Clementine for the evening are the new Secretary of the Maryland Department of Agriculture, Joe Bartenfelder, and Mark Belton, Secretary of the Maryland Department of Natural Resources. Guests for the evening will also have the opportunity to meet and sample cuisine from Clementine’s new chef Matthew Singer. Singer recently joined Clementine after rising through the kitchens of several renowned Baltimore restaurants, including Birroteca, 1542 Gastropub and the Fork & Wrench.

with arugula, beets 3 ways and apple horseradish vinaigrette

Roseda hanger steak with oyster, spinach, tarragon and tamarind
with oyster liquor and pernod poached and roasted fingerlings

Roasted quail with oyster
roasted fennel stuffing with cranberry apple gremolata, brussel sprout, butternut and maple gratin

Coconut cream tart
with coriander & cardamom and Fig & sesame tart with clementine gastrique and mild chile chocolate sauce

This cause is particularly important to Clementine founders Winston Blick and Cristin Dadant. The tireless husband-and-wife duo established their restaurant in 2008 on the premise of incorporating locally sourced ingredients into delicious homemade recipes. “Clementine’s whole ethos links to my family’s heritage for working on the water, on farms, and harvesting from fishing and hunting,” Blick says. “Doing this to highlight the critical work of the ORP to people who enjoy eating creative and well prepared locally grown and locally sourced food is why we do what we do.”

The Oyster Recovery Partnership was established as a nonprofit organization in 1994 by the Maryland Department of Natural Resources to help manage and implement the Maryland’s oyster restoration efforts. More than 5.2 billion oysters have been planted on 1,700 acres of oyster reefs in Maryland, including the largest sanctuary reef in the United States.

ORP manages the largest Shell Recycling Alliance in the country and has trained more than 50 commercial watermen to grow oysters to support Maryland’s booming aquaculture industry. Our many partners include the University of Maryland Center for Environmental Science, the Maryland Department of Natural Resources, and a host of other state and federal government agencies. Dozens of foundations and corporations — and hundreds of individuals — have enabled ORP to innovate and be recognized.

Oy Bay will take place on Wednesday, March 4th at 6:30pm at Clementine Restaurant, 5402 Harford Road.
